The Chablis by Daniel Dampt is a liquid testimony of one of the most vocated terroirs in the world, combination of salt and freshness endowed with unmatchable purity. It is the land that speaks, indeed, and it would be almost superfluous to specify that in Chablis, an area located just a bit north of the famous Cote d'Or, only Chardonnay and a little bit of Aligoté are cultivated. Daniel Dampt knows this well, founder of the family winery in 1950, now assisted by his sons Vincent and Sebastian, and his intent has always been to provide clear and truthful interpretations. Thoughtful agriculture, minimal intervention, and soils on which the vines rest dating back 145 million years, unique. The result speaks for itself: liquids that connect tension and breadth, from a unique climate. Chapeau!

The white Chablis is obtained from pure Chardonnay grapes cultivated in the homonymous area, and coming from the youngest vineyards resting on clay-limestone soils from the Jurassic era. A "base" version, aimed at enhancing the purity of the expression of Chablis, therefore in winery, after fermentation, the choice is made for aging in steel containers in order to preserve the freshness of the liquid. A more than apt choice, we feel compelled to add!

The Chablis wine fills the glass with its pale straw yellow color, typical of wines produced in the area. The nose is also a summary of typicity, and gently bestows delicate puffs of golden apple, loquats, hay, clarified butter, and almost "marine" breezes due to the soil components. The sip is a perfect meeting between the innate salinity conferred by the terroir and the roundness of the Chardonnay, enlivened by a burst of freshness that marks the rhythm of the tasting. Caution: it finishes quickly!
