The vines are about 25 years old and are grown according to the principles of organic farming on soils characterized by an abundant presence of limestone. The grapes are hand-picked and then undergo 24 hours of pre-fermentation maceration. Subsequently, a gentle pressing takes place, and the resulting must undergoes spontaneous alcoholic fermentation.thanks to the presence of indigenous yeasts.
